Put your sliced sweet potatoes(keep the skin on!) in a baking dish, add some olive oil and salt, mix together and put in the oven on a medium heat for 20 minutes to soften.
While the sweet potatoes are cooking take your parsley leaves and chop. Add to a pan with the butter and melt. Mix well together.
Heat up a griddle pan and cook your halloumi, around 3 minutes on each side.
Take your burger bun and slightly toast, then layer in the parsley butter, halloumi slices, sweet potato and chilli jam. For extra pizzazz double layer it all.

Vegetarian burgers can be a bland and unexciting, well this is all about to change with this filling, flavour packed recipe. Alternatives: Replace the sweet potatoes with a portobello mushroom.
