This dish combines the nutty flavour of peanut butter with savoury notes of soy and fish sauce, plus crunchy celery, making it a delightful twist on the classic "ants on a log"... but the noodle version!
Prepare the Sauce: In a bowl, mix together the peanut butter, fish sauce, soy sauce, and light brown sugar until smooth.
Marinate the Tofu: Add the cubed tofu to the sauce, reserving 10% of the mixture. Marinate the tofu in 90% of the sauce for up to an hour.
Cook the Tofu, either in an air fryer (400 F for 15-20 mins) shaking the basket halfway through or pan frying.
Prepare the Noodles: Cook the egg noodles according to package instructions, then drain and set aside.
Fry the Onion: While the tofu is cooking, heat a small amount of oil in a pan and fry the sliced red onion until soft and slightly caramelized. Then add in the chopped celery for 3-4 minutes, making sure to keep some the crunch.
Combine and Serve: Mix the cooked noodles with the fried onion and celery mixture and the reserved sauce. Add the cooked tofu and toss everything together. Serve immediately and enjoy!
Garnish: with a few peanuts if you have them on hand!
