Instructions
Wash & chop the mushrooms before sauteing in olive oil for 5-7 minutes
Drain your can of chickpeas from any liquid it is in
Add the chickpeas to the mushrooms, keep stirring
Add a couple of tablespoons of zaatar
after another 5 minutes, add in a bag of freshly washed spinach till it wilts, voila a 3 step brekkie!!

It's never too old to learn something new...like chickpeas (garbanzo beans) and eggs are a match made in breakfast heaven! When that yolk dances with the beans, the taste is just perfection. Try this spinach, 'shroom and chickpea hash for a quick (under 10 minute!), filling and vegan optional meal. Extras: If you want the chickpeas to be crunchy, roast them in the oven for 10 minutes before adding to the pan. Or top with a fried egg and/or grated cheese if you want an even heartier meal !
