Easy Roast Pumpkin with Date Molasses
A hearty vegetarian main course that is versatile, quick and tasty.

- 0.5 Pumpkin, cut into chunk and peeled
- 2 tbsp Olive oil
- 2 tbsp Date molasses
- Parsley Fresh
Pre-heat the oven to 200 C
Take your prepared pumpkin and in a bowl add the olive oil and date molasses, mix it all well so the pumpkin is covered
In a pyrex place your pumpkin pieces flat and then bake in the oven for 30 minutes
Check to make sure they are cooked. You're looking for a soft center but with a bit of firmness.
Remove from the oven, sprinkle with fresh parsley and pour over any of the sauce from the casserole dish. Serve with rice, quinoa or lentils.
