Saffron Crab Dip

Saffron and crab are a match made in foodie heaven, aromatic, creamy and with an added layer of flavour.

Ingredients
 

  • 8 ounces 226g full-fat brick cream cheese, softened to room temperature
  • 1/4 cup 60g mayonnaise
  • 1/2 cup 120g sour cream or creme fraiche
  • 1 cup 155g shredded cheddar cheese, divided
  • 1/2 teaspoon mustard
  • 1 teaspoon lemon juice
  • 1/4 teaspoon saffron threads steeped in 2 teaspoons of hot water for 10 minutes
  • 1 pound fresh lump crab meat

Instructions
 

  • Preheat Oven: Preheat your oven to 375°F (191°C).
  • Mix Ingredients: In a large mixing bowl, use a handheld or stand mixer fitted with a paddle attachment to beat the cream cheese on medium-high speed until smooth and creamy, about 1 minute.
  • Add Flavour: Add the mayonnaise, sour cream, 1 cup cheddar cheese, ground mustard, lemon juice, and the saffron water (including the threads). Beat on medium-high speed until combined.
  • Fold in Crab: Using a spoon or silicone spatula, gently fold in the lump crab meat, being careful not to break it up too much.
  • Prepare to Bake: Transfer the mixture to a small/medium casserole dish or use individual ramekins. Sprinkle with the remaining 1/4 cup of cheddar cheese.
  • Bake: Bake for 25 minutes or until hot and bubbly around the edges.
  • Serve: Serve warm with crackers, sliced baguette, or fresh vegetables.

Notes

This saffron crab dip is perfect as a dip or make individual pots for an extra special touch!
Tip: Save a couple of saffron threads for garnish.
