Remove your tofu from the pack and press it with a paper towel and heavy book/pan for about 10 minutes to let the water drain
Cube the tofu and add to a bowl, tossu with the Shawarma Seasoning
Pan fry on all sides until golden
In a small bowl add your sliced red onion and top with some white wine vinegar and a teaspoon of sugar to pickle, leave for about 10-15 minutes then drain
In a small bowl add your Greek Yoghurt and minced yoghurt, mix well
Get your flatbread (you can use a tortilla, wrap or make one)
Spread the yoghurt onto the flatbread, add some of the cubed tofu, a few gherkins (sliced thinly), a few fresh mint leaves and some of pickled onion
Roll up and enjoy!
