Grate the cucumbers into a small bow and then squeeze them (or press between a cloth), to ensure as much liquid is removed
In a medium size bowl add the Greek Yoghurt, minced garlic, grated cucumbers and mix together
Add the finely chopped herbs, dill or mint (if you don't have fresh, dried will do)
Add salt and pepper to taste, mix well
Finish with a glug of olive oil
Serve on it's own, with crisps (chips to the Americans!), sliced pitta breads or crudites
