Greek Yogurt & Lentil Herb Salad

Folded Lentils, Yoghurt & Herby Leaves

Ingredients
 

  • 1 Bag Fresh spinach leaves washes
  • 1 Tbsp Fresh dill
  • 1 Bunch Fresh parsley
  • 1 Cup Lentils cooked
  • 2 Cups Greek Yoghurt
  • Olive oil
  • Fried onion
  • 1 Lemon Juiced

Instructions
 

  • Wash all the vegetables and herbs, pat dry
  • Cook the lentils in water, drain and leave to the side
  • Add the spinach leaves to a big bowl, add the herbs on top
  • In a smaller bowl add the lentils, greek yoghurt, the juice of one lemon and season to taste. Mix together gently (no one wants smashed lentils!).
  • Add the lentil mixture to the leaves bowl and serve.
  • Top with fried onions or croutons for extra pizzas

Notes

This dish is perfect as a light lunch or dinner in the summer or when you have a glut of herbs at home and want to use them up. 
I love how cooling and clean the flavours are.
