Cook the lentils in water, drain and leave to the side
Add the spinach leaves to a big bowl, add the herbs on top
In a smaller bowl add the lentils, greek yoghurt, the juice of one lemon and season to taste. Mix together gently (no one wants smashed lentils!).
Add the lentil mixture to the leaves bowl and serve.
Top with fried onions or croutons for extra pizzas
Notes
This dish is perfect as a light lunch or dinner in the summer or when you have a glut of herbs at home and want to use them up. I love how cooling and clean the flavours are.
