Fresh herbs, washedWhatever amount you have at home
Basmati rice, cooked
1tspChilli flakes
Instructions
Gather your leftover, washed herbs. In my case I had mint, parsley and tarragon
Add to the blender with a couple of garlic cloves and a good swig of olive oil
Blend them together
Cook basmati rice (however your preferred technique is) but when putting it into the pot, layer in the chopped herb mixture
Add a dash of chilli flakes, 5 minutes before the rice is ready.

There are so many ways to eat rice...fork, spoon, fingers, chopsticks...or like me throw your head back, open your mouth and tip the bowl in! Ok jokies...but honestly, when I make a meal with leftovers and it tastes this good, that's what I'm tempted to do. This recipe is ideal for when you have a bunch of leftover herbs and don't want to waste them. Serve with tofu (like I did), roast chicken, grilled shrimp or even a fried egg on top. A healthy, herby meal awaits you.
