Nori & Avocado Pasta

The perfect umami recipe for when you want to use up your Nori, like I did!

Ingredients
 

  • 0.5 cup Nori (seaweed)
  • 0.5 Avocado
  • 250 grams Pasta (whichever shape you prefer)
  • 1 tbsp Olive oil

Instructions
 

  • Boil your water and cook the pasta as per the packet instructions
  • While the pasta is cooking take half an avocado and smash it with the back of a fork in a bowl, add some salt, pepper and a smidge of lemon juice for flavour
  • Drain the pasta as required and put it back into the pot with a smidge of the cooking water, add the smashed avocado and some olive oil. Give it a good mix to make sure all is combined.
  • Put the pasta in your bowl, top it with the Nori and if you are using Togarashi and/or Parmesan cheese, then add now. Enjoy!

Notes

A super quick pantry meal that will use up your Nori (Seaweed), which I seem to always have lots and lots of at home! Hearty, umami and filling for a nice meal.
