Nargesi Spinach Eggs

A Persian breakfast dish called ‘Nargesi’ that is easy, quick and surprisingly flavour packed

Ingredients
 

  • 1 Onion Chopped
  • 1 tbsp Turmeric
  • 1 Fresh Spinach Pack
  • 2 Eggs Free-range

Instructions
 

  • Fry your onion in a pan until lightly golden.
  • Add in the spinach until it wilts
  • Then add the turmeric and mix well
  • Make two small nests in the spinach and add in a cracked egg in each
  • Cover the pan with a lid and slowly cook for about 5-6 minutes (until your eggs are ready)
  • Season to taste, serve and enjoy!
