Prepare the tofu by pressing it down with some paper towels and a weight on top for about 10 minutes. The excess liquid will then drain out.
Cube the tofu and fry till golden on all sides
Thaw the frozen spinach
In a large pot add the chopped onion and some oil on a medium heat and start to fry
After 5 minutes add in the garlic and spices, mix well
Add the spinach in and combine all together well on a medium-low heat
Add the coconut milk and simmer for about 10-15 minutes, stirring regularly
Five minutes before removing from the heat add your golden tofu into the pot
To serve, remove everything from the pot and enjoy with some steaming rice or flatbreads
