Drain, cube and fry the tofu until golden. Leave it on the side.
Cook the noodles as per packet instructions, drain and put aside.
In a separate pot add the chopped onion and some oil, get a good fry on. After 5 minutes add the garlic.
Add the shiitake mushroom and some of the spring onions
In a bowl add the stock, tahini and 2 tablespoons of soya sauce. If you have rice vinegar add a few dashes now (not required).
Add the bowl of stock/sauce to the pot with the mushrooms, get it to a boil and then reduce to simmer.
Add in the tofu and noodles for 2 minutes, give it a good stir.
Your noodz are ready! Top with some sesame seeds and more spring onion.
