Vegan Tahini Noodles


Tahini Noodles

I’ve got a top secret for you all. Turns out that adding a few dollops of tahini to your noodle broth gives its the most amazing umami depth and flavour.

  • 1 Pack of noodles
  • 1 Pack of tofu
  • 1.5 Handful Shitake Mushroom Washed & roughly torn
  • 2 Tbsp Tahini
  • 1 Onion
  • 3 Cloves Garlic
  • 1 Spring Onion Chopped
  • 2 Cups Vegetable Stock
  • 2 Tbsp Soya Sauce


  • Drain, cube and fry the tofu until golden. Leave it on the side.
  • Cook the noodles as per packet instructions, drain and put aside.
  • In a separate pot add the chopped onion and some oil, get a good fry on. After 5 minutes add the garlic.
  • Add the shiitake mushroom and some of the spring onions
  • In a bowl add the stock, tahini and 2 tablespoons of soya sauce. If you have rice vinegar add a few dashes now (not required).
  • Add the bowl of stock/sauce to the pot with the mushrooms, get it to a boil and then reduce to simmer.
  • Add in the tofu and noodles for 2 minutes, give it a good stir.
  • Your noodz are ready! Top with some sesame seeds and more spring onion.
