Vegan Saag Paneer

This Vegan Saag Paneer is a non-dairy version of one of my favourite Indian dishes.

Ingredients
 

  • 1 Pack Frozen spinach (or fresh)
  • 1 Can Coconut Milk
  • 1 Pack Medium/Hard Tofu
  • tbsp Turmeric
  • tsp Cumin Seeds
  • tbsp Garam Masala
  • tsp Coriander seeds
  • 1 Onion Chopped
  • 3 Garlic cloves Minced

Instructions
 

  • Prepare the tofu by pressing it down with some paper towels and a weight on top for about 10 minutes. The excess liquid will then drain out.
  • Cube the tofu and fry till golden on all sides
  • Thaw the frozen spinach
  • In a large pot add the chopped onion and some oil on a medium heat and start to fry
  • After 5 minutes add in the garlic and spices, mix well
  • Add the spinach in and combine all together well on a medium-low heat
  • Add the coconut milk and simmer for about 10-15 minutes, stirring regularly
  • Five minutes before removing from the heat add your golden tofu into the pot
  • To serve, remove everything from the pot and enjoy with some steaming rice or flatbreads

Notes

A tofu-rrific recipe that is great for newbies cooking tofu or for those who might not be fans of eating yet. I call this a 'gateway recipe'! 
Whether you have it as a side dish to a larger meal or as the main course, this vegaan saag paneer is full of flavour whilst also being healthier than the original version with paneer.
