Cucumber & Greek Yoghurt Dip

A garlicky, refreshing appetizer that can please a crowd

Course Appetizer

Ingredients
 

  • 350-400 g Greek Yoghurt
  • 2 cloves Garlic minced
  • 2 Cucumbers (small) grated
  • 1 tbps Mint or Dill (fresh ideally) chopped fine
  • 1 tsp Olive oil
  • Salt & Pepper

Instructions
 

  • Grate the cucumbers into a small bow and then squeeze them (or press between a cloth), to ensure as much liquid is removed
  • In a medium size bowl add the Greek Yoghurt, minced garlic, grated cucumbers and mix together
  • Add the finely chopped herbs, dill or mint (if you don't have fresh, dried will do)
  • Add salt and pepper to taste, mix well
  • Finish with a glug of olive oil
  • Serve on it's own, with crisps (chips to the Americans!), sliced pitta breads or crudites

Notes

I was lucky enough to enjoy a fun foodie walking tour of Athens with local guide, Julia. On the tour she also taught us a few traditional Greek recipes. This  garlicky, refreshing appetizer is one that I learn in the streets of Athens and haven't stopped making since!
