Springtime Salmon Salad

Ingredients
 

For the salmon

  • 1-2 filet Salmon
  • 3 tbsp Greek yoghurt
  • 1 tsp Turmeric
  • 1 tsp Paprika

For the salad

  • 1 bunch Baby asparagus
  • 1 head Lettuce

Instructions
 

  • In a small bowl add the yoghurt, turmeric and paprika, mix together well
  • Spread the yoghurt mixture onto the salmon and onto baby asparagus
  • Place the salmon and asparagus into a baking or casserole dish
  • Keep a close eye on the oven, to make sure it doesn’t burn
  • Remove salmon from the oven, flake the salmon with a fork
  • Add some washed and chopped lettuce to a big bowl
  • Add the flaked salmon and asparagus

Notes

For extra pizazz...slice up a red onion, soak it in water for ten minutes (to remove the bite) and then drain before adding to the salad. It will add flavour and crunch, but not overpower the salmon if you do this.
