In a large pot, on a medium heat, add olive oil and the diced onions for a few minutes and the turmeric. Mix well.
Pre-heat the oven and cook your meatballs (I am not going to lie, I love the Ikea ones. They are quick, easy and tasty). Or use homemade ones.
Add the celery (which you would have cut at 2-4 inch angled pieced) and heat for a good 5-8 minutes
Add the stock and let is simmer for another 5 minutes
Add in the chopped parsley and mint, lower the heat slightly. Cook for another 5 minutes.
Add a squeeze of lime or lemon juice (whatever you have on hand)
Remove meatballs from the oven and add to the stew for the last 1-2 minutes.
Serve with basmati rice and enjoy!
