In a medium bowl add garden peas (I use frozen), and a handful of fresh mint to olive oil, white wine vinegar and a pinch of sugar.
Toss the above ingredients together to make sure it is well coated and leave for 15 minutes
After 15 minutes, add the chicory leaves (endives), a diced avocado and some lettuce leave to the pea & mint mixture. Toss gently.
Your salad is ready!

This Nigella Lawson inspired salad is quick to make, has extra charged flavours and highlights the fresh ingredients. For extra vavavoom you could add garlic croutons, crumbled feta, grilled halloumi or even a can of chickpeas.
