Herbed Celery & Meatball Stew

Cheat's Persian Celery & Meatball Stew

A cheat's version of the delectable herb & celery Persian stew I grew up. Prepared in less than 30 minutes.

Ingredients
 

  • 1 Onion Diced
  • tbsp Turmeric
  • 1 Bunch Celery
  • 1 Cup Vegetable Stock
  • 1 Bunch Parsley Fresh
  • 1 Bunch Mint Fresh
  • 3 Cup Basmati rice
  • 15-20 Meatballs

Instructions
 

  • In a large pot, on a medium heat, add olive oil and the diced onions for a few minutes and the turmeric. Mix well.
  • Pre-heat the oven and cook your meatballs (I am not going to lie, I love the Ikea ones. They are quick, easy and tasty). Or use homemade ones.
  • Add the celery (which you would have cut at 2-4 inch angled pieced) and heat for a good 5-8 minutes
  • Add the stock and let is simmer for another 5 minutes
  • Add in the chopped parsley and mint, lower the heat slightly. Cook for another 5 minutes.
  • Add a squeeze of lime or lemon juice (whatever you have on hand)
  • Remove meatballs from the oven and add to the stew for the last 1-2 minutes.
  • Serve with basmati rice and enjoy!

Notes

If you are into herby, fragrant dishes then this Celery Stew is for you! 
A cheat's version of the Persian Khoresh Karafs, this version is much quicker to make and has meatballs in it. You can go also try it vegetarian as well by omitting the meatballs. 
This is a regular on my dining table (when my mum isn't around, to tell me off!)
