Super Quick Green Bean, Chickpea & Pesto Salad

Easy Peasy Green Bean, Chickpea & Pesto Salad

This quick, flavour packed salad can be the star of your meal or a side dish with a bang. It can be whipped up in under 15 minutes and is a must-try.

Ingredients
 

  • 1 Can Chickpeas Drained
  • 1 Pack Green beans 250-350 grams
  • 2 Tbsp Pesto
  • 1 Tbsp Crispy fried onions Optional

Instructions
 

  • Drain the chickpeas and put in a medium bowl
  • Rinse your green beans and then blanch in boiling water for 3-5 minutes
  • Remove the beans from the water and pat dry
  • Trim about 2 inches long
  • Add the green beans to the chickpeas, gently mix through the pesto (homemade or store bought)
  • For an added touch you can sprinkle some fried onions on this (I always keep some in my freezer)

Notes

This is one of those super handy, under 15 minute preparation recipes that will wow your guests, friends & family or just been a self-care lunch that puts a smile on your face. 
The flavours from the pesto pack a punch, while you get plenty of veggies and protein to boot. Have it as a healthy lunch, take it to work or even serve it as a side dish. 
I'm not going to lie, I was pretty pleased with myself after creating this excellent dish!
