Instructions
Drain the can of tuna and set aside
In a separate bowl, add the mayonnaise and anchovy paste. Mix well to combine.
Slice the red onion and gherkins thinly and set aside.
Prepare your bread of choice (slice open & toast if required)
Spread the anchovy mayonnaise mixture onto one slice of the toasted bread
Layer the sliced red onion, gherkins, and tuna over the anchovy mayonnaise.
Season with salt and black pepper to taste.
Top with the other slice of toasted bread and serve

I've been thinking up creative ways of using my tubes of Anchovy Paste and combining it with mayonnaise for the ultimate, grown-up Tuna Sandwich seemed like a no brainer. It adds a salty kick which would be perfect with a cold beer on the side!Additionals: feel free to add sliced tomatoes or even some rocket leaves.
